Sourced from the most beautiful plots of the estate, that these grapevines are over 30 years old, planted on hillsides with very low yields and harvested late so as to obtain the best possible phenolic ripeness allows us to obtain these exceptional cuvées, which are the quintessence of our wines.
For the white Chardonnay, the plot planted in 1971 is harvested at night to avoid any oxidation. After that, the grapes go through an 8-hour process of skin maceration in a pneumatic press and pressing and fermentation at a temperature set at 14°C. The final stages of fermentation and the six-month maturing take place in 600-litre muids made of new wood.
The red wines stem from long traditional fermentation lasting more than 15 days with pumping over and punching down at regular intervals and a part of the pressed wines incorporated into the free-run juice. The maturing, which lasts from 18 to 36 months and takes place in oak barrels from the forest of Tronçais, allows us to bring out the strong character of these exceptional cuvées.
Tasting them at room temperature with a good meal, after light aeration, will bring out their best qualities.
Château Isolette is a vineyard located in the Rhône valley, with 35 hectares of vines in the heart of the Luberon National Park.
